Personal observation made me understand that in restaurants for tourists, food is an order of magnitude worse than that prepared in local barely noticeable eateries. And that's what I think is the reason.

All the staff in high-level restaurants located in tourist places, hired workers who do not care deeply whether you like the dish or not, because they understand that most tourists will soon leave anyway. Therefore, even if visitors did not like the institution and they will not come there again, they will be replaced by new tourists who have just arrived and will necessarily visit the restaurant, because it's "beautiful" there.

And in the local diners mostly family business, there are a lot of customers among the customers and therefore the chef, who is also the owner of the establishment, invests in each dish a piece of his soul.

Therefore, I can say with certainty that if, for example, you visited Thailand, where in every corner of every street there is something shkvarchit, boils or gurgles, and did not try Tom Yam in a cafe, which no guide knows where there is no no tourist, where the cook is part-time and the owner of the institution in the fifth generation, then, alas, you have not fully experienced Thailand.
