For me, a part of vacation is actually discovering the local food, or at least discovering what kind of general kitchen is going on over there. Some times you will like it, and add influences of what you have learned to your kitchen at home, and sometimes it was nice but nothing more.

Vietnamese kitchen is a perfect example of all influences I really want to include in my normal cooking. Everything fresh and just herbs and spices so make your dish awesome. Again: Key ingredient is Fresh. And that is easy said when you are staying at the beachside region in Hoi An Vietnam.

Just look at these this snapper and this squid. So full of flavor and just caught straight out of the sea. Squid is always to me a key ingredient where you can see what the chefs are doing. It can have the structure of rubber, or it can be as tender as fall off of the bone-ribs....That is dependent of what has been done to it.

Now don't expect a fancy place when you walk into Wild Beach. Expect a small shack on the beach which also rents outs beach chairs (maybe something to do for the next time), and a sort of family business of people who don't really speak English but are super helpfull on trying to get you to your culinary goal.

Do you want to see where your fish is caught? Just get up early in the morning or later in the afternoon to see these little fishing boats fighting the water to catch the goods out of the ocean. Afterwards all seafood is held in live water tanks throughout the day to make sure that it really comes as fresh as that you would want it to be on your plate. And the price? Embarrassingly low: for just $5 this fish is on your plate and for $4 the squid is yours.


Go for it: you will not regret this one
