There is no doubt that gastronomy is, for every traveller, something that goes beyond a simple biological need: an extremely enriching experience, in which the senses are unconditionally subordinated to the palate.
Talking about gastronomy in a country as varied and picturesque as Spain is not an easy task, since each region, each community obtains, in the raw material that characterizes it, its own vision and tradition, its products and its customs, often subordinated to the climate and the particular characteristics of its environment.
Due to its quality, its strength, its excellence and its variety, the North of Spain has always been a land dedicated to good eating and in this sense, Cantabria continues to be a paradise, which, combining superb nature with a first-rate Historical-Artistic Heritage, also has, in gastronomy, a true treasure to discover.
Part of this treasure, moving away from the famous mountain stews, the succulent meats, the variety of its fish and the sumptuous excellence of its seafood, lies in the quality and variety of a product, cheese, which finds its raw material in two animal species, which, since the distant Neolithic times, were considered pure gold: the cow and the sheep.
Although there are more varieties, generally, there are six main Cantabrian cheeses, many from Liébana, whose taste, smoothness and character put the palate of any diner to the test and are usually served on a single tray, whose purpose is none other than to provide an experience of flavors and consistencies, difficult to reject and of course, to forget.
These six varieties combine the dairy products of cows, sheep and goats and are presented separately and mixed - one of the most select varieties, hence its excellent consistency, is the product of all three - to which is added a sublime variety, similar to the famous Asturian Cabrales cheese, although lighter and made to melt in the mouth, which is called picón cheese, all seasoned with an opportune and varied selection of nuts and wines that always offer a commendable pairing.
In short, my fellow traveller: another of the pleasures that you should never miss if one day, that demonic genius, who is the old Fatum of the ancient Greeks or Destiny, if you prefer, brings you one day to this land of wonders to discover.
